Costa Esmeraldas
Ecuador
Grown by the Salazar family in Muisne on the northern coast of Ecuador, and thanks to it's good fermentation practices, it has a solid chocolate taste complemented by very low acidity, and nuanced notes of red fruit, warm cedar, brown sugar, and toasted nuts.
Key Characteristics
Genetics: Selected Ecuadorian Nacional hybrids (EET-95, 96, 103) that blend heritage floral-fruit aromas with disease resistance and uniform quality.
Acidity & Bitterness: Exceptionally low and mild, trading sharp citrus notes for smooth, jammy fruits and swapping harsh bitterness for rich fudge notes.
Roast Profile: Best suited for a "low and slow" roast, where lighter profiles highlight berries and medium-to-dark roasts maximize chocolate and nut flavors.
